The thickening mechanism of cellulose thickeners is that the hydrophobic main chain binds with surrounding water molecules through hydrogen bonding, increasing the fluid volume of the polymer itself, reducing the space for particle free movement, and thus increasing the viscosity of the system. Cellulose thickeners can also increase viscosity through the entanglement of molecular chains, manifested as high viscosity under static and low shear conditions, and low viscosity under high shear conditions.
